GENERAL MISSION

Under the general guidance and supervision of Bar Manager / FBD, and within limits established within the Villa Song Saigon Hotel Policies and Procedures. Supervises waiters/waitresses for the general service inside and outside Bar …. as well as ….. Bar, escort guests to tables recommends drink list items, takes guest orders, supervises cocktail presentation, beverage service and in general ensures guests’ satisfaction. Assistance Restaurant and Banquet outlet if requested.

RESPONSIBILITIES AND MEANS
  • Responsible to the bar area and his staff. Must take care of the perfect service and set up in the bar.
  • Contributes globally guest satisfaction through the quality of his/her work and exemplary behavior.
  • Is responsible for one area of the bar, in charge of organization, coordination and waiter service.
  • Provide a high standard of hospitality and service for guests in the F&B point of sale.
GENERAL RESPONSIBILITIES
  • Assists in supervision of day to day operation of the restaurant, including but not limited to – staffing, equipments, sales and costs.
  • Check attendance and punctuality of staff, in addition to attire and general standard of grooming and hygiene.
  • Assists in supervision and control of subordinates.
  • Check levels of mise-en-place.
  • Ensures complete and professional table setup following hotel standard
  • Checks on cleanliness of the bar before operation.
  • Checks on sufficient stock condiments, wines, linen etc
  • Checks on sufficient supplies (Captains order etc)
  • Assists to checks daily at shift commencement all menus and drink list / event orders or special requests and ensures there are adequate levels of staff and equipment to perform required duties, informing to Bar Manager or Food and Beverage Director if required.
  • Supervises the taking of guest’s orders, food and beverage service and presentation of guest checks.
  • Monitors timing of food orders and liaises between kitchen, staff and guests as necessary to inform of delays.
  • Participates in service as necessary.
  • Has a thorough knowledge of the all menus (including wine and cocktail knowledge).
  • Assist and inform to Bar Manager to checks with the Restaurant Manager or the Kitchen for unavailable items or daily specials prior to the commencement of service.
  • Suggest new ideas to increase sales and add value to our guests.
  • Ensures all staff follow procedure for taking guests orders and instructs staff to follow procedures according to the accounting requirements.
  • Assists in increasing profitability of outlet by assisting staff in skills of up-selling and increasing sales.
  • Handles any guest complaints professionally and promptly, informing Bar Manager or Food and Beverage Manager when necessary.
  • Conducts pre-shift briefings as necessary.
  • Ensures that personal grooming standards is met by all staff under direct control.
  • Assist but unlimited in supervising and control the administration work as required:
  • Attendance records
  • Duty roster
  • Log books
  • Spoilage reports
  • Damaged / broken items report
  • Ensures proper maintenance and control of all equipment in the restaurant.
  • Recommends disciplinary action when warranted as well as rewarding outstanding performance.
  • Maintains Villa Song Saigon Hotel International standards at all times.
  • Must maintain privacy of all hotel information.
  • Attends training courses as requested.

  • Promoting OH&S, EEO, Rehabilitation and Environmental management with employees and contractors

WORK CHARACTERISTICS
  • Must be able to work independently with little supervision, as well as have the ability to consider, evaluate and make sound business decisions regarding question as problem solving.
  • Must be familiar with all hotel’s procedures and regulations.
  • Good presentation. Dynamic. Honest and loyalty.
WORK EXPERIENCE
  • Must have at least 2 years experience in a similarly job.
  • Computer literate.
  • Languages: fluent in English language ( both verbal and writing).
EDUCATION
  • International Hotel background, food and beverage knowledge.
  • Certification/License: No
TRAINING
  • English Language
  • Bar and restaurant knowledge

PERFORMANCE STANDARDS

Based on an annual evaluation by the Bar Manager and the F&B Director. Basis for evaluation will consider the ability to perform the job functions and handle special projects as assigned.

WORKING CONDITIONS

Environment: Indoor and outdoor Food and Beverage environment & professionally. Standard hotel business hours must be maintained. Additional hours necessary to provide support for special functions that require the assistance of a Bar Supervisor. Professional working environment.

OTHER

Must have a perfect hygiene and grooming. Have ability to communicate in a polite way. Be able to communicate effectively at all levels. Be alert and responsible, the business functions seven days a week, 24 hours a day. A hospitable service atmosphere must be projected at all the time. As the business demands the Bar Supervisor must render his/her dedication to the job. To perform other related duties and special projects as required by Bar Manager / F&B Director or the Hotel management.

WORKING TIME

  • Morning shift from 6am to 2pm.
  • Afternoon shift from 2pm to 10pm.
